Times Are a’Changing

Soon we’ll be setting our clocks back ..ya know.. falling back (hey it’s how I remind myself of the time change “spring forward/fall back”) and that means shorter days and longer nights. However, I do love this time of year!

I love the crisp air and football season! Hey..can’t be a Tennessee gal and not love SEC football on Saturdays! Also, I love the coziness of wrapping up in my fuzzy housecoat or a blanket on the couch with a glass of red wine. And finally, I love me some soups!

Soup is probably one of my most favorite things to make. From versatility to filling, there are so may types of soup that we eat in our house. We like veggie soups, thick stews, spicy and comforting soups..I love them all! A couple of years ago, I was searching online for a hearty soup that I could make quick without a lot of fuss and be able to serve it to friends for dinner.

Then I found LASAGNA SOUP! It hit everything on my checklist, not too time consuming (shopping was probably the longest part of the recipe), hearty, filling and something I could serve friends and family for a dinner party. To say it was a hit was an understatement. Not only did we enjoy it, it became a recipe that I had many requests for!

Lasagna Soup a’ la Stephanie Shanks!

One of my favorite things about this soup is that you can add/remove/substitute so many things and it is still going to be so tasty! Don’t have lasagna noodles? Don’t worry, one of our readers (shout out to Stephanie Shanks) made her soup but substituted the noodles she had in her own pantry. By the looks of the photo, I’m sure it was delicious!

I will offer a tip here! If you find that you won’t need to use an entire tub of ricotta cheese, try cottage cheese instead. Our family tends to eat cottage cheese more often, and so we don’t worry about wasting the ricotta!

And there you have it..the recipe and the outcome. When others tell you it’s a hit, you gotta believe them! And this recipe is a HIT!

We’ll be tinkering with more soups this week I think as the weather continues to change. I just made a ham and potato soup over the weekend that was EVEN BETTER the second day! Which brings me to another tip, make extra! Some recipes freeze easy and you can enjoy that bowl of goodness by simply defrosting and heating! Again, we’re a soup lovin family and will always find a way to savor the flavors we love!

So don’t stress about colder weather! Go grab your dutch oven, brown up some sausage and get ready to feed your soul with a warm bowl of love!
